To develop the selection, the jury is based on an evaluation grid whose criterias are:
– Freshness, quality and origin of used products
– The culinary expertise, respect of products, proposals originality,
– The enhancement of Loire wines and especially wines from Nantes (Muscadet, Gros Plant, Coteaux d’Ancenis and Fiefs Vendéens)
– the welcoming quality, the decor and the atmosphere.
