Blue lobster cocotte (in a small, cast-iron pot) summer vegetable terrine in shellfish jus, roast headcheese with spices, filet of pickerel in Nantes-style beurre blanc, langoustine and bacon spring roll, creamy risotto with a light touch of saffron, crunchy spring vegetables.
