For all hedonists out there on a quest for contemporary, creative, stylish cuisine that is high in flavours and technical mastery, Jean-Yves Gueho (one star in the Michelin guide) will “awaken your palate” with rafraîchie (“refreshed”) spider crabmeat, tomato marmalade and effeuillé (thin slices) of avocado; filet of collé-serré turbot, lobster stuffing, lobster coulis; or, shoulder of Pyrenees milk-fed lamb, preserved in mild spices. Superb view overlooking the Île de Nantes.
