You can’t have good cuisine without good ingredients!
The Nantes region is an extraordinary open-air market for the chefs of Les Tables de Nantes. In addition to extremely fresh seafood, there are also fruits and vegetables that have benefited from a long tradition of market gardening (the famous carotte nantaise and lamb’s lettuce were born here!), breeding cattle, pork and fowl, as well as many other types of agriculture. The stalls burst with a rich variety of products all year long!

Along with this diversity is a level of quality that is unique in France. The region remains nº 1 in official stamps of quality (AOC and Label Rouge), and if one adds the fact that the département is in the top rank for organic farming, you’ll have all the ingredients for fresh, diverse, and flavourful food that truly characterizes today’s cuisine nantaise.
This food goldmine isn’t only reserved for chefs, because you can find all the same ingredients throughout the seasons in the many markets of Nantes, the region, or in vineyards.
